More kale for everyone!

Do you remember when I made my big confession, right here a few months ago? You know, about not really liking kale?  In case you missed that big moment, here it is again That was a turning point!  Since then, kale chips have become a norm in our household.

If there’s one consistent thing that I tell all my clients and all my friends, it’s that just about everyone should eat more greens. My kids definitely hear this more often than they’d like but the good news is even they’ve jumped onto the kale chip bandwagon!

Leafy greens are nutritional powerhouses. This simply means you get way more bang for your buck when you load up your plate with spinach, swiss chard, rapini, arugula, romaine, bok choy and, of course, kale. When so much of our diet can be nutritionally empty and leave our bodies starving for more nutrients, adding a cup or two of these green gems to your daily diet goes a long way in promoting your health and boosting your energy.

Staying gluten-free with Home-made Chicken Fajitas

Dear readers: big apologies for having gone AWOL over the past few weeks! It wasn’t intentional. Firstly, life got a little crazy. Now that school is over for my boys, I can get back to my normal routine.

But it wasn’t only the kids’ demanding schedule. I also have to put some blame on  kitchen mishaps. You see, I had such great feedback from the muffins in the last post that I thought I should develop some more gluten-free recipes to replace the wheat we’re all eliminating from our diets. It was a good lesson.

Gluten-free muffins even bread lovers will adore

I love bread. No, I mean, I REALLY love bread. Any kind – white, whole grain, soft, crusty, chewy, melt in your mouth, to me all bread is amazing. It is my comfort food. As an Italian girl, I’m pretty sure my first bites must have been of either pasta or bread. I grew up eating these foods for breakfast, lunch and dinner. And snacks. What good Italian mama doesn’t shower her children with love and affection by slathering heaping tablespoons of Nutella on soft white bread? My mama sure did and to this day bread is my favourite food in the entire world.

Thinking of going gluten-free?

One of the most common questions I’ve been receiving recently is about the gluten-free fervour that everyone has been hearing about but few really know anything about. Seems like we all have a friend, a neighbour, or an uncle who has been touting the joys and newfound energy that go along with switching to a gluten-free diet. I’m finding that many people who haven’t tried it are sceptical yet those who have can’t help but gush about how great they are feeling. Is there really something to this?

Sweeten your day with a little honey

Do you ever have those times when you rediscover a food you haven’t been eating for a while and then wonder why you haven’t been eating it for a while? Right now, that’s me. Last week I came across a jar of honey I hadn’t touched in weeks and now I can’t stop thinking of more ways to keep adding to my diet.

That day I decided to try something a little different for my smoothie and I swear, it was the best smoothie I’d ever had. Ever. (recipe below) So the next day I added honey to a salad dressing I was making and once again it happened. Best. Salad. Ever. Who knows why I hadn’t been using it, it just fell off the radar. In case that’s happened to you here are a few reminders why honey should be included as part of your healthy day.
