Guacamole

This recipe is so delicious I often have to remind myself how healthy it is…..feels like a treat!

  • 1-2 large ripe avocado
  • juice of half a lime
  • 2 cloves of garlic, minced
  • sea salt, to taste

Grip the avocado gently with one hand. Use a sharp knife to cut the avocado lengthwise and around the pit. Open the two halves to expose the pit.  Gently pop out the pit and use a spoon to scoop out the flesh.  Combine all the ingredients in a bowl and mash gently with the back of a fork.

Best if eaten immediately as with time the avocado will brown.

Can be used as a spread or dip for veggies or crackers.
