Lemon-Herbed Rainbow Trout

Baked Rainbow Trout

This is a very simple, light dish with a nice lemony flavour.  Delicious and perfect for a quick meal.

Herb Butter:

  •  1-2 tbsp softened butter (organic)
  • 2 tbsp chopped fresh herbs (chives, dill, parsley, whatever you enjoy)
  • juice of half a lemon

Mash the herbs and lemon juice into the butter to make a spread. Spread a thin layer of the herb butter over the rainbow trout fillets.
Preheat oven to 400 degrees.

Cut the other half of the lemon into thin slices.  Place lemon slices on top of the fillets.

Place the fillets on a parchment-lined sheet and bake for about 10-15 minutes, depending on thickness of fish.

I often will make an extra fillet or two……so good for lunch the next day!
